0 0 2. The absolute best fresh fruit galettes

Some of the best dishes start with simple ingredients. Freshly picked blueberries, real butter, sugar, lemon juice, ginger,cinnamon and cornstarch are mixed together and spooned into a puff pastry and baked at 375 deg F. In 40 min, dessert is ready!

Keeping it simple is always the best.

The Recipe: Fresh Fruit Galettes


1 quart fresh organic blueberries (or frozen)

2 Tbs fresh lemon juice

1/4-1/2 cup organic sugar (depending on sweetness you desire)

1 Tbs cornstarch

1/4 tsp ground ginger

1/4 tsp cinnamon

1 stick Unsalted butter

Puff Pastry OR homemade pie pastry

All purpose flour (for dusting pastry sheets)


1. Cut thawed puff pastry sheets into 6 squares. Roll them a bit larger on floured board with rolling pin. Place each sheet in an individual greased small tart pan or large muffin tin.

2. In a large bowl mix together blueberries, lemon juice, cornstarch, ginger, cinnamon and sugar.

3. Place a scoop of fruit mixture into each crust.

4. Add 1 Tbs butter to top of each tart. Pull dough up and pinch together to close over blueberries. (This keeps the fruit inside the tart while cooking.)

5. Bake at 375 deg F for about 40 min or until pastry is cooked and golden brown on top.

6. Sprinkle with sugar when removed from oven. Serve warm with a scoop of vanilla ice cream or top with fresh whipped cream. Enjoy!
